Tomo XIV, an exquisite Recioto della Valpolicella DOCG Classico from Sant’Ambrogio di Valpolicella in the 2016 vintage, is a blend of Corvina Veronese, Corvinone, Rondinella, Croatina, Teroldego, Merlot, Molinara, and Oseleta. Hand-picked in mid-September, the grapes undergo a meticulous 120-day drying process, enhancing sugars and polyphenols. Vinified in February with a unique fermentation interruption to preserve sugars, the wine matures in oak barriques, stabilizing color and evolving aromas. Bottled for at least 9 months, Tomo XIV, with an alcohol content of 13% Vol, encapsulates Valpolicella's winemaking finesse and a harmonious blend of grape varieties.

Eleva

Eleva Winery, located in the heart of Valpolicella, Veneto, is renowned for its exceptional wines crafted in a region rich with history and tradition. Valpolicella offers an ideal climate for vine and olive cultivation, surrounded by the Eastern Prealps, the Adige River, and the scenic Lake Garda.

Situated in Valpolicella Classica, specifically in Sant'Ambrogio di Valpolicella (Loc. Conca d'Oro), Eleva spans 6 hectares, with 18 terraced vineyards supported by traditional dry-stone walls. The estate follows organic practices and focuses on cultivating classic regional varieties, including Corvina Veronese, Corvinone, Rondinella, and Oseleta. Eleva's wine range includes Valpolicella Classico, Ripasso, Recioto, and Amarone, with Amarone being traditionally produced, allowing the grapes to dry naturally in the fruit cellar before vinification and aging in traditional barrels.

The winery was founded in 1989 by Franca Maculan, who, due to illness, left the estate to charity upon her passing. The chosen charity entrusted the management to Raffaella Veroli, the winemaker, and Davide Gaeta, her university teacher, both of whom decided to continue Franca’s vision. Their collaboration led to the creation of Società Agricola Eleva, continuing the legacy of producing world-class wines in the heart of Valpolicella.

Valpolicella

The terroir of Valpolicella is shaped by its rolling hills and valleys, located between Lake Garda and the Lessini Mountains, creating a diverse range of microclimates. The region benefits from cool breezes from the Alps and the moderating influence of Lake Garda, which help maintain acidity and extend the ripening period, allowing for balanced and complex wines. The soils vary across the area, with limestone and marl in the higher elevations, contributing to structure and minerality, while alluvial and clay-rich soils in the lower valleys enhance richness and depth. These conditions result in elegant, fresh Valpolicella wines, as well as powerful, age-worthy Amarone and Ripasso, showcasing both finesse and intensity in their expressions of the native Corvina, Corvinone, and Rondinella grapes.

The northern mountainous areas, including regions like Valpolicella and Soave, benefit from limestone-rich soils and a continental climate with significant day-night temperature variations, which enhance the structure and aromatic complexity of the wines. In the central hills, volcanic and marl-rich soils contribute to the minerality and depth of wines like Amarone and Soave Classico. Further south, the Venetian plains, with their mix of clay, sand, and gravel, provide a fertile environment for high-yielding vineyards, particularly for Prosecco production. The influence of nearby lakes, such as Garda, moderates temperatures and creates a milder climate, ideal for balanced ripening.
