Padre is the flagship Taurasi from La Cantina di Enza, a small organic and biodynamic estate in Montemarano, in the volcanic hills of Irpinia. It is made entirely from Aglianico grown in the winery's highest vineyards, hand-harvested and left to ferment spontaneously for twenty to thirty days without temperature control, drawing out the grape's full depth of colour and tannin. The wine then ages for three years across large chestnut barrels, spent oak barrique, and bottle, a slow process that lets its structure soften without losing definition. The 2015 shows a brilliant ruby red moving toward garnet, with orange reflections and a dry, austere palate of firm tannin framed by dark fruit and earth. Best served with grilled lamb, aged pecorino, or other dishes robust enough to meet its structure, and it will continue to reward patience in the cellar.

Founded in 2011 in the historic town of Montemarano, Cantina di Enza is a boutique winery in the heart of Irpinia, Campania’s renowned wine region. Enza Saldutti, a fourth-generation winemaker, carries on her family’s legacy with a deep respect for the land and a commitment to natural viticulture, embracing low-intervention methods to preserve the region’s indigenous grapes.

Spanning 7 hectares, including vineyards with rare post-phylloxera vines over 70 years old, the estate also cultivates olive groves and cereals. The south-facing vineyards, set at 380–400 meters, benefit from the cooling influence of the Calore River, enhancing the structure and intensity of the wines. Since 2016, the estate has been certified organic, with a growing focus on biodynamic farming.

Enza’s minimalist approach avoids chemical additives and filtration, allowing the wines to express their purest form. Her portfolio includes Taurasi DOCG “Padre” Bio, a bold yet elegant Aglianico, Irpinia Aglianico DOC “Passione” Bio, and Campania Rosato “Nata Rosa” IGP, a fresh and vibrant Aglianico rosé. The Dall’uva organic red embodies her dedication to natural winemaking, while Volpe Rossa, made from the rare Coda di Volpe Rosso, offers a refined and unique expression.

Terroir

Taurasi

The terroir of Taurasi, particularly in this area, is defined by its high-altitude vineyards, volcanic soils, and continental climate, making it one of the most structured and age-worthy expressions of Aglianico in Italy. Located in the heart of Irpinia, the vineyards sit at elevations between 300 and 600 meters, benefiting from significant diurnal temperature variation, which allows the grapes to ripen slowly while preserving acidity and aromatic intensity.

The soils here are predominantly volcanic, with layers of tuff, clay, and limestone, which provide excellent drainage and impart a distinct minerality to the wines. The continental climate, with cold winters and warm summers, combined with frequent autumn fog, enhances the complexity and depth of the wines.

This terroir produces Taurasi wines that are bold, structured, and incredibly age-worthy, with deep black fruit, tobacco, leather, and spice notes, firm tannins, and vibrant acidity.
