An aromatic white blending Carricante (60%) with Catarrato, Minella Bianco and Garganega, sourced from five vineyards, Carrana, Feudo di Mezzo, Taccione, Monte Dolce and Nave, between 720 and 1,000 metres on volcanic ash and lapilli. Vines average around 50 years old, whole clusters fermented spontaneously with indigenous yeast. Spearmint and citronella open into honey and dried orange peel, with a finish of bitter melon and citrus. Give it a 30-minute decant to unfold fully. Lovely with roasted branzino, clam pasta, or something sweet-and-sour.
