From Cru Cielo, the highest vineyard in Europe at 1,520 metres, a 1.1-hectare plot Stef Yim planted in 2020 with clones of Pinot Noir, Grenache and Pinot d'Aunis, on ground so volcanic that smoke rose when the first vine posts were driven in. Made in tiny quantities, first vintages aged in demijohn. Pale, slightly cloudy red-cherry colour, wonderfully aromatic with green, sappy red cherry, redcurrant, beetroot and rhubarb, opening onto a fresh, silky palate lifted by wild strawberry and lavender. Genuinely singular, there's nothing else quite like it on Etna, or anywhere.
