Harvested by hand in early September, the winemaking process is meticulous. After gently pressing the grapes and clarifying the juice, fermentation occurs for 8-10 days at a controlled temperature. The wine then ages on fine lees in steel vats with continuous stirring for at least 4 months.
With a light straw-yellow color, the wine has an intense bouquet with notes of acacia flowers. The taste is dry, pleasantly bitter, and well-balanced.
