The grapes are carefully hand-harvested in late September at their peak ripeness. In the cellar, the winemaking process is meticulous. After crushing and a 12-hour skin maceration, the juice undergoes fermentation for 8-10 days at a controlled temperature. The wine then ages on lees in steel vats with periodic stirring for at least three months.
