Spontaneous fermentation in steel vats, with indigenous yeasts. There's no malolactic fermentation, allowing the wine to maintain its natural vibrancy. Following this, it undergoes a refinement period of 12 months in steel on fine lees, followed by an additional 6 months of aging in the bottle.
