Integrale is an ancient way to produce Prosecco. At the time, the sealed tanks for fermentation did not exist, and the production of sparkling wine was done with a single fermentation in the bottle called the Ancestral Method. There is no addition of extra yeast and sugar to produce a second fermentation, only the original elements from the grapes. Wines fermented with the Ancestral Method do not get disgorged; therefore, they often present some sediment at the bottom of the bottle. The latter helps preserve the wine and adds complexity during ageing.
Marchiori is a small family business in the stunning hills of Valdobbiadene, part of the UNESCO Heritage. On these steep hills, the vineyards are planted with the original grape varieties used to produce Prosecco: Glera Tonda, Glera Lunga, Perera, Bianchetta, and Verdisio.
