Integrale Valdobbiadene Prosecco DOCG Frizzante - 2018
Integrale is an ancient way to produce Prosecco. At the time the sealed tanks for the fermentation were not exiting, the production of sparkling wine was done with a single fermentation into bottle called Ancestral Method. There is not any addition of extra yeast and sugar to produce a second fermentation but only the original elements from the grapes. Wines fermented with Ancestral Method, do not get disgorged, therefore they often present some deposit at the bottom of the bottle. The latter helps to preserve the wine and add complexity during aging.
Marchiori is a small family business in the stunning hills of Valdobbiadene, part of the UNESCO Heritage. On these steep hills, the vineyards are planted with the original grape varieties used to produce Prosecco: Glera Tonda, Glera Lunga, Perera, Bianchetta, and Verdisio. The wine production follows the tradition of single variety vinification then blending and re-fermenting. Each one of them brings his exclusive personality to the final wine.
Star bright straw yellow with silver variations. Fresh nose with white pear, apple, citrus blossom scent, and white bread tone. The palate is delicate with a dry finish with juicy pear and pink grapefruit.
The wines are fermented in the bottle, Ancestral method.
