Boldo Colli d'Imola DOC - 2019
Cabernet Sauvignon & Merlot blend for this wine. The winery planted in the 70s some Bordeaux varietals in two specific vineyards of theirs. More precisely at Vigna Mazzolano, where the soil is dominated by gravel and sand, perfect for the production of Cabernet Sauvignon. The Vigna Fondo Chiesa is planted with Merlot, considering the rich presence of clay in the soil.
Tre Monti winery started in the 70s with Thea and Sergio Navacchia. Today, David and Vittorio, the children, are looking after the winery's daily tasks. A true Italian family business. Initially, they were seen as revolutionary people because they started lowering the yields in the vineyards in order to be more focused on the quality of the grapes rather than the quantity. Tre Monti is producing wines from local varieties such as Albana and Sangiovese but they are keen on using other varieties like Sauvignon Blanc and Cabernet Sauvignon. Classic wines expressing the style of the area are made from these varieties but trying also their macerated wines is a must!
Deep concentrate ruby red. Ripe black plum and blueberry followed with sweet cooking spice as vanilla and cinnamon. The palate has a full-body structure with a long finish of blackcurrant, coffee powder, and bay leaf.
The wine goes under maceration for 14 days, the fermentation has happened in steel tank and cement vats, followed by malolactic fermentation and maturation for 6 months in used Allier barriques. Bottled without any filtration.
